How the calculation works

Brix measures soluble solids as a percentage of weight. Adding water does not change the amount of solids, only the total weight, so the diluted weight is the paste weight multiplied by the starting Brix and divided by the target Brix. The water to add is the difference between the two weights.

Example: a 230 kg drum at 37% Brix, diluted to 28.5% Brix, gives about 298.6 kg of paste. You add about 68.6 kg of water, or 0.30 kg for every kilogram of paste.

Mix fully and check the result with a refractometer. The Brix of each TOMEX batch is stated on its Certificate of Analysis, so start from that figure rather than the grade range.

How much water do I add to lower the Brix of tomato paste?
Divide the starting Brix by the target Brix and multiply by the paste weight: that is the diluted weight. The water to add is the diluted weight minus the paste weight. Going from 37% to 28.5% Brix takes about 0.30 kg of water per kilogram of paste.
Which Brix should I enter for my paste?
The Brix measured for your batch. Every TOMEX batch ships with a Certificate of Analysis that states it, so use that figure rather than the middle of the grade range.
Why does my measured Brix differ slightly from the result?
Small differences come from mixing and measurement. Mix the paste and water fully, then measure with a refractometer before you adjust further.
