Hot Break Tomato Paste
TOMEX Hot Break Tomato Paste is supplied at 28–30% Brix. In the hot break process the tomatoes are heated immediately after crushing, which stops the enzymes that break down pectin, so the paste keeps more of its natural viscosity.

Appearance and colour
Bright red paste, available in colour values 1.7, 1.8, 1.9, 2.0 and 2.1, the same as our other grades. The hot break process keeps the colour while building viscosity.
Colour values 1.7, 1.8, 1.9, 2.0 and 2.1 apply to paste supplied in aseptic drums. Choose yours on the quotation form.
Consistency, pH and microbiology
Bostwick consistency of 3.0–4.5 cm/30s, the thickest in our range: a lower Bostwick reading means a more viscous paste. pH 4.0–4.4; mould count below 40% positive fields (Howard method). No salt is added.
